Food allergies, like one to gluten, are common. When diagnosed with an allergy, our lives change. Food allergies influence the type of lifestyle we lead. Socializing and food go hand-in-hand. Whether it be a quick bite, or a large family meal, where there is people, there is food.
Celiac Disease is an autoimmune disease where your body reacts to gluten by attacking your small intestines. It is an allergy, but it’s also more than that. If you are diagnosed Celiac, you don’t have to miss out on life opportunities. It makes life a little bit more difficult and requires more caution and thinking ahead, but it isn’t the end of the world, as many of us think upon diagnosis.
Personally, I received my Celiac diagnosis 2012, and although it was an adjustment, I continue to enjoy food on the daily, in social situations and at home. Here, I share tried and true recipes, with my super picky seal of approval. I know what food with gluten tastes like, as I didn’t receive a diagnosis until I was 25. No gluten-free recipes tasting like sawdust here—believe me.
